In between working it is easy to forget to feed your brain and body. I have been coming up with some quick, easy and healthy meals to satisfy myself but not take ages to prepare.
What you will need:
- wholewheat bread ( I got mine from a farm style shop, it’s always better homemade and fresh)
- Avocado (about tbs)
- tomato (2 slices)
- onion to top
- salt and pepper to flavour (optional)
- corn on the cob ( I do mine in the microwave for 5 mins while I toast the bread and prepare the toppings, saves a lot of time)
