A Quick Sunday Lunch

In between working it is easy to forget to feed your brain and body. I have been coming up with some quick, easy and healthy meals to satisfy myself but not take ages to prepare.

What you will need:

  • wholewheat bread ( I got mine  from a farm style shop, it’s always better homemade and fresh)
  • Avocado (about tbs)
  • tomato (2 slices)
  • onion to top
  • salt and pepper to flavour (optional)
  • corn on the cob ( I do mine in the microwave for 5 mins while I toast the bread and prepare the toppings, saves a lot of time)
